SEBASTIAN – We made a second visit to Papa’s BBQ after several people asked us to try the brisket, which is Papa’s signature meat.
Last month, we wrote a Papa’s BBQ review and showcased their pulled pork sandwich, which was met with higher expectations.
So, Friday we went back and tried several more items from their menu.
The BBQ brisket sandwich, which is $8 without sides, was so delicious that I wanted another one. So many different flavors with each bite and incredibly tender.
Danny Gossage, the owner, told us that the brisket takes up to 14 hours to cook, and they only use salt, pepper, and garlic to season it. Most of the flavor comes from smoking these meats for long hours as they cook over oak logs.
The pork spare ribs were so tender that is was falling off the bone; they were mouthwatering.
Papa’s french fries are hand-cut from whole potatoes and then placed into an ice-cold bucket of saltwater. Gossage said this keeps them firm before they cook them in the fryer.
Their homemade potato salad takes around three hours to make 40 pounds. They use potatoes, red onion, dill pickle, and eggs.
We had fried okra as our vegetable, it was the first time I tried okra, and I will order it again. The mac & cheese was another favorite of mine. They sprinkle salt, pepper, garlic, and parmesan on it.
Saving the best for last was Mama’s Dump Cake! If you like cobbler, you will love this dessert.
